Mit einem Gen hat Eckhard Boles die Bierhefe Saccharomyces cerevisiae dazu gebracht, auch aus Pflanzenteilen, die bisher als Abfall galten, Ethanol zu produzieren.

Eckhard Boles has used a specific gene to encourage the brewer’s yeast Saccharomyces cerevisiae to also use plant material previously regarded as waste in ethanol production.

Bierhefe (Saccharomyces cerevisiae) ist ein wertvolles Nebenprodukt, das innerhalb der Bierherstellung nach der alkoholischen Gärung der sogenannten Bierwürze anfällt.

Im Prinzip ist dies ein ähnlicher Prozess wie beim Aufgehen von Brotteig. Obwohl Bäckerhefe zur selben Saccharomyces-Gruppe wie Bierhefe gehört, sind sie nicht austauschbar: Brothefe eignet sich nicht zur Gärung von Bierwürze.
