- Das Gemisch aus Molke und Bruch wird nach dem Schneiden, dem Rühren und dem Abzapfen eines Teils der Molke ein- bis zweimal mit heißem Wasser gewaschen, wobei das Molke-Bruch-Gemisch auf höchstens 37 °C erhitzt wird.
