Malt flour = grain (usually barley) steeped in water, left to germinate in the cellar, then allowed to dry out in the loft.

Malzmehl ist in Wasser geweichtes Getreide (meistens Gerste), das man erst im Keller keimen und anschliessend auf einem Speicher trocknen lässt.
